Do all left justify. Or center it and left justify it. The direction I'd move forward with is #3. Can you dress it up a bit? Play with the letters or something. It's looking too plain. I know I told you to keep it simple but this is very simple. Add some edgy stuff in it. Don't go in the same direction as your 1st one with the fancy dingbats.
I agree, I think it's too simple, I know that you can do better than this, you always create the most amazing visuals, this is too simple you might lose the cretivity that your words bring out if you just use a simple white background and basic font
